I’m so in love with these miniature taco cookies!
I mean who wouldn’t love these. Right!
They were so much fun to make and took no time at all.
Here’s what you need:
mini red M&M’s
yellow food colour
Green food colour
One chocolate cupcake and icing
Start by taking the filling off the Oreo, set the filling aside we will use it with the cupcake later. Then cut the Oreo in half. A tip: use a hot knife to cut the Oreo, they don’t break as easily. And if a couple do break don’t worry 😉, everyone will be in aw of how cute they are no one will notice.
Now add food colouring to the shredded coconut until you have your desired colour. I added about 6-7 drops to the yellow “cheese” and only about 4 drops of green to the “lettuce”. Set those aside and start mashing up the cupcake with the oreo filling and the icing to make your “taco meat”.
After you have all your toppings ready you can start assembling.
I made these with my daughter and we formed a little assembly line, it was so much fun!
I used mini M&M’s for the “tomato” but really any red candy will work just fine.
You can get away with using any sort of candy that resembles the toppings, so you don’t need to run out and by these specific items.
The only thing I would recommend is the Golden Oreos as they are sturdy and easy the work with, plus they taste great!
I think these would be a hit at the kids table at your next fiesta.
